Ingredients & Substitutions

Sugar: I used white sugar for this recipe, but other types of sugar, such as coconut sugar or demerara sugar, can be substituted for a 1:1 ratio.

Butter at room temperature: Brings creaminess to this tender sourdough banana bread.

All-purpose flour: Gives this sourdough banana bread much-needed structure.

Baking soda: A leavening agent to help the banana bread rise so that it is soft and fluffy.

Salt: Balances the sweetness of the fruit and sugar.

Sourdough discard: Adding sourdough discard to this recipe slows gluten formation in the batter, resulting in extra tender banana bread. You can also use an active sourdough starter just be sure to use the same amount in grams.

Vanilla extract: For deeper flavor, use vanilla extract instead of imitation.

Ripe bananas, mashed: The more ripe the banana, the better! I will often freeze my overripe bananas. That way, I always have ripe bananas on hand for this delicious sourdough recipe.

Walnuts: I love the crunch that chopped walnuts or pecans add to this sourdough banana bread. These are optional, though you can swap them for chocolate chunks, chocolate chips, shredded coconut, or any other mix-in you like.

Once combined, add the eggs to the mixture, one at a time. Continue to beat on medium speed until it is light, fluffy, and pale yellow in color. Stop to scrape the sides of the bowl when necessary.

In a separate bowl, add the flour, baking soda, and salt and whisk until combined. Set aside.

While mixing on stir/low, alternate adding the dry ingredients and sourdough discard to the egg mixture. Occasionally stop mixing to scrape the sides of the bowl. Mix until there are just a few streaks of flour left.

Why You’ll Love This Recipe

Quick and Easy:

This recipe comes together with minimal effort and no complicated steps. You don’t need special equipment just basic pantry staples, a bowl, and a loaf pan. It’s ideal for busy mornings, last-minute baking, or when you need a reliable recipe that consistently delivers.

Super Moist:

Ripe bananas combined with sourdough discard create a tender crumb and rich texture. The natural acidity in the discard enhances moisture retention, resulting in a loaf that stays soft for days without becoming dense or gummy.

No Waste Recipe:

Instead of discarding excess sourdough starter, this recipe gives it purpose. It’s a practical way to reduce kitchen waste while adding subtle depth of flavor to a classic banana bread. Efficient, economical, and flavorful.

Frequently Asked Questions

Can I use active sourdough starter instead of discard?

Yes. Active starter works just as well as discard in banana bread. Since this recipe relies on baking soda or baking powder for leavening, the starter does not need to be bubbly or recently fed. Active starter may produce a slightly lighter texture, but the difference is minimal.

Will the banana bread taste sour?

No. Sourdough discard adds subtle depth rather than strong tanginess. The sweetness of ripe bananas balances the mild acidity. If your discard is very old and highly acidic, the flavor may be slightly more pronounced, but it should not overpower the bread.

Can I freeze sourdough discard banana bread?

Yes. Allow the loaf to cool completely, then wrap it tightly in plastic wrap and place it in a freezer-safe bag. It can be frozen for up to three months. For convenience, freeze individual slices so you can thaw or toast them as needed.

Happy baking!
